How I Finally Succumbed and Learned to Like Quinoa

This month I'm turning you on to a recipe my friend Lynda shared with me. My trainer has been on and on at me about quinoa and I finally bought a bag. Actually, this is the second bag I've bought. The first one I gave away after it had been sitting unopened in my cupboard for three months. This one, though, I finally opened and I made what I call Lynda's Quinoa (or How I Finally Succumbed and Learned to Like Quinoa).

Preparation time: 25 minutes
Serves: 4

2 tbsp olive oil
1 small onion
2 garlic cloves
1 cup quinoa
2 cups chicken broth (or water)
salt and paper

Heat olive oil in a sauce pan over med/high heat.

Add onion and garlic.

Saute for a few minutes until golden.

Add quinoa and cook for a few minutes, stirring constantly until golden brown and toasted, approx. 5 minutes.

Pour in broth or water and bring to simmer.

Cover and cook for 15 minutes.

Let stand for 5 minutes.

Taste and add salt and pepper.
